RECIPE: Salmon Portobello

Salmon Portobello recipe

1  Salmon filet 10oz 

2/3 cup portobello topping (recipe will follow)

2 lemon wedges

pinch of parsley

Cook salmon skin side down in pan

Flip, remove skin, continue to cook until salmon is cooked medium, flipping one more time

Pile portobello topping high on salmon

Garnish with parsley

 

Portobello Topping

6oz raw portobellos, sliced

1 oz clarified butter

1 oz wine mix (white wine and lemon)

1 tbsp garlic, minced

pinch of salt and pepper

 

In pan, heat butter until it just about begins to smoke

Add portobellos and lightly brown, add wine mix, then remaining ingredients

Cook until just dry

Pile high on top of salmon
